Orange Poppyseed Dressing

Serve this over a salad of Boston lettuce, honeydew, canteloupe, grapes and maybe some chopped ham or prosciutto.
This dressing is also delicious on watercress or spinach salads, too!


2/3 cup vegetable, peanut or olive oil
2 tablespons frozen orange juice concentrate
2 tablespoons honey
1 tablespoon poppyseeds (toasted at 350 degrees F. for about 4 minutes, or toasted in a dry skillet for about 1 minute while stirring)
1/4 cup fresh lime juice
2 tablespoons orange zest
2 green onions, diced
Dash salt & pepper, to taste

In a blender, combine everything except the poppyseeds, blend until smooth.
Add the poppyseeds, stir then chil
l until ready to serve. Stir once again if the poppyseeds have settled to the bottom.
Makes about 1 1/4 cups.
