Orange Poppy Seed Dressing

Serve this over a salad of Boston lettuce, honeydew, cantaloupe, grapes and maybe some chopped ham or prosciutto.
This dressing is also delicious on watercress or spinach salads, too!

2/3 cup vegetable, peanut or olive oil
2 tablespoons frozen orange juice concentrate
2 tablespoons honey
1 tablespoon poppy seeds (toasted at 350 degrees F. for about 4 minutes, or toasted in a dry skillet for about 1 minute while stirring)
1/4 cup fresh lime juice
2 tablespoons orange zest
2 green onions, diced
Dash salt & pepper, to taste

In a blender, combine everything except the poppy seeds, blend until smooth.
Add the poppy seeds, stir then chill until ready to serve. Stir once again if the poppy seeds have settled to the bottom.
Makes about 1 1/4 cups.
